5 Hearty & Warming Dinners To Make This Fall

What is it about fall that makes us want to gather round the cauldron and brew up something hearty and delicious? Few things bring me autumnal joy like walking in my home, shedding sweaters, and smelling the aroma of dinner softly bubbling in the crockpot. With colder weather and the season of all things pumpkin approaching, my heart (and stomach) yearns for a warm meal at the end of the day.

I have experimented with each of these recipes and can guarantee their ease of preparation and delectable taste. So, gather up your bunches of fresh herbs, pull out your largest crocks, and let’s get cooking!

This roast spends the day marinating in thick gravy, tender veggies, and fresh herbs. It’s perfect for when you have time early in the day to prep and allows you to breeze in for dinner and scoop up a delicious meal! I love to add some sliced mushrooms to this recipe for an added veggie and pair it with a crusty loaf of sourdough for optimal dipping. Find the recipe here.

 

My father adores chicken pot pie, and I grew up enjoying the frozen delicacy from our local grocery store. A couple of years ago when he visited, I looked up a recipe for a homemade version and was shocked at how easy it was! Granted, I use a frozen pie crust and frozen veggies, but the end result still feels luxuriously homemade. For an extra measure of ease in preparation, purchase a rotisserie chicken to shred for the cooked chicken portion. Find the recipe here.

 

03 | Chili

My family has a tradition of making a big pot of chili each Halloween night. This recipe fills you up for a long evening of trick-or-treating! We love to add Fritos and cheese, but some of our friends favor cornbread to soak up the flavors. If you’re looking for a lighter option, you can use ground Turkey or leave out the meat altogether for a vegetarian meal. Find the recipe here.

This recipe is a variation of one we’ve been making for years. My husband loves a sheet pan meal with roasted veggies liberally sprinkled with olive oil and salt. While this recipe uses chicken thighs, you can substitute sausage links for a spicier flavor. The gorgeous colors of the squash, sprouts, and sweet potatoes create a fall feast for the eyes and tummy! Find the recipe here.

I was first introduced to this meal through a meal delivery kit and was thrilled I could easily recreate it. It’s similar to a beef stew but in casserole form with mashed potatoes on top. Anything with stew, casserole, and mashed potatoes is a winning combination in my home!
